When summer finally arrives, our caterers will turn their attention to the barbecue menus that they will be preparing for our hungry customers. In advance of this, we have devoted a little time to compiling a list of some of the best barbecue foods. We hope you agree with our selections!

Always popular is the burger, which should be made from prime quality beef. To add spice to the patties, you might add a little pepper and oregano in addition to a pinch of salt. Once thoroughly cooked, the burger should be served on a roll, baguette or ciabatta with a little lettuce, a tomato and mayo or tomato sauce.


Tandoori Chicken Legs

 
Chicken is another popular bbq dish. We suggest that if it is prepared Tandoori style it will be even better received! We suggest a marinade consisting of red onion and garlic, ginger, fresh coriander and yoghurt. The chicken should be marinated for thirty minutes before being placed on the grill to be cooked thoroughly.


Herby Pork Chops

 
Another great recipe, this time for marinated pork chops in a herby sauce. The marinade consists of raspberry vinegar, rapeseed oil, crushed peppercorns and a finely chopped sprig of oregano leaves. The sauce consists of a couple of lightly beaten egg yolks, a tablespoon of finely chopped capers, four tablespoons of finely chopped flat-leaf parsley one tablespoon of chives and six tablespoons of olive oil. After marinating the chops for an hour they can be cooked on the grill for around five minutes on each side and served with the sauce.


Lamb Kebabs

 
A spicy choice for the barbecue is the lamb kebab. This mix might contain cubed leg of lamb, 75 ml of olive oil, two tablespoons of ground cinnamon, one tablespoon of allspice, two tablespoons of ground cayenne pepper and two crushed garlic cloves. Mix the ingredients into conveniently sized meat balls an, after a couple of hours in the refrigerator, cook them for around seven minutes. Marinated Jumbo Shrimp

The marinade consists of one quarter of a cup of olive oil and cilantro, half a shallot, three tablespoons of lemon juice, one teaspoon of dried basil, one minced clove of garlic and one teaspoon of salt. Because shrimp cook quickly, keep a close eye on them when they are on the grill. Two minutes a side should suffice. Serve on skewers.
